OVEN BAKED VEGGIES

Every once in a while we have a craving to eat healthy food. But then the big dilemma crosses our minds, healthy food is not tasty (-_-). 
I myself being a hardcore non-vegetarian, coming up with healthy vegetable recipes is not an easy task :p 
My mom is always after my life to eat some greens and other healthy vegetables rather than just cooking and eating different sorts of meat all day long.
Well finally I came up with this recipe which not only is healthy and green but is also amazingly tasty. It uses fresh ingredients and therefore is full of flavour and freshness. You will want to keep coming back for more. 
So this recipe keeps both our tummies and our moms happy. :D

INGREDIENTS
  • 1 full Broccoli (cut into small / medium pieces)
  • 1 red Bell pepper (cut in squares) 
  • 1 yellow Bell pepper (cut in squares)
  • 15-20 Button Mushrooms (cut in half)
  • 250 gms Tofu (cut into medium sized cubes)
  • 1 large onion cut into 8 wedges
  • 3 - 4 baby tomatoes cut into 4 wedges
  • 10 - 12 baby corns (cut into 3 pieces diagonally) 
  • 1 tbsp crushed black pepper powder
  • 1 tbsp oregano
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 tbsp butter
  • 6 - 8 garlic cloves (chopped)
  • Cheese ( you can use any cheese of your desire )
  • 1/2 lemon's juice
  • Salt as per taste
  • 1 tbsp Oil

STEPS

  • Take a large non stick wok and add the oil and butter to it.
  • Add the chopped garlic to this when the butter melts. Let it sizzle for 2 mins.
  • Drop in the broccoli and onions and cook on a high flame for 5 mins stirring continuously.
  • Reduce the heat. Add the baby corns and tofu and continue stirring.
  • After 5 mins add the Red and Yellow bell peppers, the tomatoes and the mushrooms and keep stirring for 2 mins.
  • Add the salt, black pepper, oregano, thyme, parsley, lemon juice and more butter if required and mix well.
  • Cover the wok and cook for 8-10 mins till the mushrooms are cooked and soft.
  • Take the wok off the heat and empty the contents onto a baking tray. Empty it with the oil so that it does not stick to the tray.
  • Spread the vegetables evenly on the tray and grate the cheese all over the vegetables. Be generous with the cheese :P
  • Pre-heat the oven to 180 degrees and slide the baking tray into the oven.
  • Let it baked for 8 to 10 mins till the cheese melts and gets a slight brownish tinge to it.
  • Take it out of the oven and serve hot.
