The Best Gooey Egg and Cheese Mash Sandwich
Everyone loves a good sandwich. I usually like to experiment with my sandwiches and hence one fine day I stumbled upon this masterpiece. If you love creamy potato mash, then this egg and cheese mash will make you go bonkers. The egg is mashed with milk, cheese and herbs which give it a rich gooey texture, plus it is exploding with flavor and can be enjoyed both in a sandwich and also as a stand-alone dish, served as a side with some grilled meat.
The sandwich is wholesome and really healthy. Being a diet conscious person myself I always try and make my dishes packed with all sorts of nutrients and with minimal use of oil and other unhealthy substances. This sandwich packs a good amount of proteins, fibers and carbs and will definitely leave you craving for more.
Ingredients:
- 2 eggs (hard boiled)
- 4 slices bread
- Mayonnaise
- Mustard Sauce
- Barbecue Sauce
- 1/2 tsp Black Pepper Powder
- 1/2 tsp Dried Oregano
- 1/4 tsp Chilly Flakes
- 1/2 tsp Mexican Seasoning (optional)
- 1/2 bowl shredded cheese
- 4 tbsp warm milk
- 1/2 tsp sugar (for caramelizing the onions)
- 1 big onion (sliced)
- 1 small tomato (chopped)
- 4 fresh Romanie Lettuce leaves (you can use any other lettuce also)
- Butter
Steps:
- Hard boil 2 eggs. Once done, peel the shell and keep aside.
- On your bread slices spread Mayonnaise and little bit of mustard and barbecue sauce.
- Heat a pan, add some oil (1-2 tbsp) and drop in the sliced onions. Stir fry on medium heat for 5 mins. Add the sugar and continue to stir fry till the onions turn into slightly caramel brown color. Take off the flame and keep aside.
- Take a big dish and put the boiled eggs in it. Use a fork and mash it lightly. Add the oregano, chilly flakes, black pepper powder, Mexican seasoning, salt, shredded cheese and warm milk. Continue to mash till the egg mash becomes little smooth and turns creamy. (We add warm milk to make the cheese melt easily and make the mash creamy)
- On your bread slices, put some chopped tomatoes, chopped lettuce leaves, put half portion of the egg and cheese mash, top it with caramelized onions and place the other slice of bread on top.
- Next heat some butter on a flat pan (tawa) and place the sandwiches on them. Grill on medium heat for 5 mins each on both sides till the bread turns brown and crispy. (I don't use a sandwich maker because the filling is soooo gooey that it will just ooze out of the sandwich the moment you close the sandwich maker lid)
- Enjoy hot.
