Zesty Lemon Chicken
This is one of my recently discovered recipes. I had a similar recipe at this take away at Pune called Royal Only Chicken (ROC). It was one of my favorite take away shops which I found to have much better chicken than KFC. Value for money offering incredible taste, this store offered a variety of Chicken delicacies to choose from.
This recipe had been then newly introduced and after I tasted it, I just had to remake it at home. It has got this zesty lemony taste to it along along with a slight punch of spiciness and the incredible taste from the fresh herbs used.
I made it at home as a trial and it tasted soo incredibly fresh and juicy I had to make others try it. This dish can be made either on a pan or at a barbecue. Its a perfect quick barbecue dish as it hardly takes upto 10 mins of prep time with no compromise towards the taste.
I have as usual used a with-skin chicken as I love the flavor the chicken fat (which burns off the skin) adds to the taste, however the choice of chicken is up to your discretion. Go ahead and take a bite into this juicy Mexican delight.

INGREDIENTS
- 1/2 kg chicken legs
- 1 tbsp fresh lemon juice
- 1 1/2 tbsp garlic paste
- 1 tsp red chilly flakes
- 1/2 cup fresh finely chopped coriander leaves
- 1/4th cup fresh finley chopped parsley
- 1 tsp oregano
- 1 1/2 tsp black pepper powder
- 2 - 3 tbsp melted butter
- Salt as per taste
STEPS
- Wash the Chicken Legs and pat them dry.
- Score the Chicken to help the marination spread nicely.
- Normally I prefer "With Skin" chicken as the skin contains chicken fat which adds a lot of flavor to the chicken once it starts to cook. However you can use without skin chicken also as you like it.
- Put all the marination ingredients on tje chicken and rub it nicely so that it spreads well.
- Keep it in the fridge and let it marinate for 30 mins to 1 hour or you can cook it immediately if you are in a hurry.
- Its best to cook this chicken on a charcoal grill as it adds up the flavor. However if one doesn't have a charcoal grill, you can also use an electric Tandoor.
- Incase you don't have either take an aluminium foil wrap and brush it with oil. Place the chicken on the foil and wrap the chicken loosely. Don't wrap it too tight.
- Take a pan with a lid and place this packed chicken onto the pan. Cover it with a lid and put the flame on high.
- After 5 mins you can reduce the flame to medium. Let it cook for 10 mins this way.
- Then take off the lid and flip the chicken, cover it again with the lid and let it cook for another 10 mins.
- Turn off the flame and carefully remove the chicken from the foil and serve hot.
